Sugar Free Banana Bread

Ingredients

3 medium sized (large ok too) ripe bananas
4 eggs
2 tsp vanilla extract
1/4 cup coconut oil melted, then cooled to almost room temperature
1/34 cups almond flour
1/2 cup arrowroot flour (or tapioca starch)
1 tsp baking soda
1/2 tsp baking powder
1 tbsp cinnamon
1/2 cup chopped nuts or chocolate chips, or both!
2-3 tbsp maple syrup- this loaf is sweetened only with bananas and is really tasty but for those who want a little zing, you can add some maple syrup.

 

Instructions

Preheat oven to 350 and line or grease loaf pan.
Whisk together the wet ingredients. In a separate bowl stir dry ingredients together, then slowly blend in the wet ingredients. do not use a hand mixer or blender for this or the loaf will turn out wet and flat. It took me a loooong time to understand almond flour. If you just fold together by hand, it will rise and be a moist interior but not wet. Pour into loaf pan and top with sprinkled cinnamon and a few chopped nuts or chocolate chips. The cinnamon will brown, so you can omit this step if you want a lighter looking loaf.
Bake for 55 minutes and test with toothpick. Mine came out clear from the center after 55 minutes perfectly, depending on your oven, yours may require a few extra minutes. It is really important to allow the loaf to completely cool. Almond flour can be tricky, so control yourself, 😉 it’s totally worth it.

 

Intention

We are so fortunate for so many things…and it’s easy to forget that at times. As you prepare this loaf, remember all the little things you take for granted that others who inhabit this earth don’t have. Be grateful, take care of your body, and learn to really love yourself without self-judgment. We are so hard on ourselves most of the time….let those thoughts go and instead, consider all you have to be thankful for. This banana bread is so satisfying, some mornings I sit with a cup of Immunity Tonic Milk  and a slice of this loaf for breakfast and I stare off into the woods, so thankful for all I have been blessed with in my life.
