Lavender Lemonade w/Honey



April has been a very interesting month so far here in Massachusetts. We’ve had 20 straight days of rain (there’s a lot of flooding going on!) with unusually warm temperatures and sun peeking out in between downpours. The air is thick and heavy. There is so much moisture some days we’ve had to turn the A/C on already! Being a woman of a certain age, (with certain hot flashes that accompany said certain age lol) I was looking to cool down and quench some of the heat while not breaking my restrictive AIP protocol I’ve been doing for over a month now. I’ve also been completely addicted to lavender this Spring. Most lemonades are loaded with sugars, this one uses organic raw honey, organic dried lavender, fresh lemon juice and spring water. Nothing else!
This makes it an amazing astringent elixir as it cools and quenches. The benefits of lavender are tremendous. It is anti-inflammatory, anti-bacterial, it calms the nervous system and aids in insomnia or sleep disruptions. (And this tastes like you’re in the French Countryside.)

Note* Please be mindful where you source your honey from. We use local Farmer’s Markets so we can get to know our apiary and ensure we are not taking from the bees needed supply. Bees first, lemonade second.


6 cups of water
1/4 cup dried lavender (if you have a mortar and pestle you can crush the lavender to release a stronger flavor)
8 tablespoons of honey
1 cup freshly squeezed lemon juice


Bring water and honey to a boil on the stove, remove from heat and stir in lavender only. Cover and refrigerate for 2 hours. Strain the lavender from the liquid, stir in fresh lemon juice and enjoy! You can garnish with lemon slices, and serve with some lavender carob chocolate bars!
