Healthy (drool worthy) Apple Crisp

Ingredients- for the filling

6 local macoun apples (or whatever you love, make sure they are fresh, crisp and medium in size or large, if small, increase number) peeled, cored and sliced 1/4 inch thick
1 tbsp maple syrup
1 tsp cinammon
1/4 tsp ginger
1/4 tsp nutmeg
1/4 tsp pumpkin pie spice

Ingredients- for the crisp (or crumble)

1 cup raw pecans (you can also use almonds for this)
3/4 cup almond flour
2/3 cup coconut flakes
1/4 cup coconut oil, plus 2 tbsp
1 tsp vanilla extract
2 1/2 tsp cinnamon
1/2 tsp ground ginger
1/4 tsp nutmeg
1/2 tsp pumpkin pie spice (or apple pie spice blend-I only had pumpkin pie spice on hand)
1/4 tsp salt
2 tbsp maple syrup

Instructions

Preheat oven to 350

Wash, peel, core and slice apples and place in a medium sized bowl. Add in all the filling ingredients (spices at the top) and toss. Place the coated slices in a baking pie dish, 9-10″ round. Mine is a 9 inch dish.

Place all the “crisp” ingredients into food processor and pulse until you get a thick paste. Do not over pulse! You want it to feel like crumble in your hands. This took maybe 15-20 seconds in mine. Place over the apples. Cover as much as you can. I like to get my hands in there and work it like a pie. Bake for 45 minutes. Let rest until cool. The flavor really comes together after you’ve let it cool a bit. Serve alone, add coconut ice cream, whatever you like. Lasts up to 4 days in fridge (yeah right.)

 

Intention

This is the most delicious season in New England. The air cools, the humidity lessons, and all the farms have freshly picked crisp apples! I had to go back for more because we ate some on the drive home and didn’t leave enough for the crisp! Nature is such an incredible energy to behold. She provides for you, she loves you beyond measure and she waits patiently for you to connect with her bounty and her energy in the form it was originally designed to nourish and realign you with. Eat food that still looks and tastes like real food.

Take a few minutes, breathe, gather your ingredients, make this with such love and appreciation in your heart (you can taste and energetically benefit from that!) Then go outside, sit for a minute and connect. The conversation that shows up in response to your appreciation sent to Nature might just surprise you…

In this busy commercial world, the best way to be the best version of you is to eat well, rest well, breathe well and love and appreciate well. Illness is simply a calling card from Nature letting you know that you’ve strayed too far from home…
