Fresh Garden Pasta (with shrimp)


At the end of summer harvest, there are the juiciest tomatoes, fresh beans, zucchini and summer squashes. Nature’s bounty and beauty is absolute nourishment for the body and soul. A friend of Greg’s from his work gifted him with fresh veggies from his garden and I whipped this up for dinner. We used to grow veggies in our woods but you can guess who ate them all every year yes? We settled for a raised herb garden and when we have the extra time, we plant for the critters to come and feast.


3-4 tbsp olive oil
1-2 tsp chopped garlic
1 chopped yellow onion
1 zucchini- spiralized (I use a spirooli)
handful fresh chopped beans
1 medium tomato, diced
10 -12 large shrimp, cooked and thawed
1 tbsp fresh or dried oregano
1 tbsp fresh or dried parsley
1/2 tsp celtic sea salt
dash fresh ground pepper


In saucepan heat up olive oil, onion and garlic, about 10 minutes on medium low to really allow the onions to soften and release their high vitamin content. Add in diced tomato, chopped beans and cook on low until softened, but with texture (not mush.)
Add in shrimp and zucchini noodles. Mix until thoroughly coated. Cover and let simmer for 5 minutes, checking and flipping noodles so they absorb some of the sauce. When noodles are softened, serve. Garnish with fresh parsley if you like.

At those times try and step out of your life and into nature, even just for a few moments and let her breathe through you. She will wrap you up in a nurturing embrace, clean and clear your energy field, refresh your mind and open your heart and, if you will let her, she will guide you to a new relationship with her, yourself and all that exists around you. When we are gifted with food from her heart, we share her DNA and we embrace our expansive limitlessness. One of the reasons why fresh vegetables are so good for us is not just their health benefits but literally their cellular components. Just as couples share cellular reorganization in accordance with one another, so too are you in a cellular relationship with the earth. She can heal you through your willingness to receive a new cellular reorganization….remember, consciousness is never just about the physical manifestation that you witness….it is about everything that occurs first in order to bring it to you.
