Asparagus is a very good source of fiber, folate, vitamins A, C, E and K. It is also high in chromium, a trace mineral that enhances the ability of insulin to transport glucose from the bloodstream into your cells. If you have blood sugar issues, asparagus should be a regular part of your diet. Asparagus is also used for preventing stones in the kidney and bladder as well as anemia, due to folic acid deficiency. Asparagus is a super-hero.
1 large package asparagus (I buy them in the bulk pack from Costco), or two bundles from the market.
1-2 tsp chopped garlic
1 chopped yellow onion
1 carton vegetable broth (about 3-4 cups)
1 tsp celtic sea salt
dash fresh ground pepper
Pre-wash asparagus and snip off the tips and set aside. Of the remaining stalks, cut the “woody” ends off (they tend to be too pulpy for soup) and cut into 2 inch pieces. In saucepan heat up olive oil, onion and garlic, about 10 minutes on medium low to really allow the onions to soften and release their high vitamin content. Add in carton of vegetable broth and cut asparagus stalks- do not add the tips- they are saved for later. Stir and bring to a soft boil. Once at a slow boil, remove from heat and add contents to a blender and blend until smooth. Return to stove on simmer and add salt and pepper. Now add the tips in and simmer on low for another 10 minutes or until tips are tender.
Making a pot of soup to me is like stirring the cauldron in deep meditation. As you stir, think upon a time when you felt sad, or hurt, or suffered from low self-esteem. Stir your cauldron, and begin to remember a time when you laughed, when you felt free and when you allowed yourself to be present, in just this moment. In the present moment you are undefined. Your story is not active, your self-judgment muted, only presence exists. When we can tune deeply into presence, understanding that we are an extension of the Goddess, having an experience here on earth, allowing ourselves to be the mirror reflection of all that is, we can no longer feel small or less than. The very best healing you can give yourself is first in your emotions, recognize that your lack of love for yourself is in the past and part of an old definition based on circumstances that you survived. Second it is in your mind, where you can free yourself from any grip by living the very best present moment that you can right now. Nothing and no one holds any power over you anymore, in this brand new precious moment, if you don’t allow it to be a recreated moment of your past. And lastly, it is in your body, that vessel that loves you and works tirelessly for you every day. When you begin to fill your body, mind and emotions with living and loving nutrients, you create a future that is completely in the power of your own hands, guided by the Goddess who loves you for the exquisite being that you are.
