Carob “Chocolate” Bar with Lavender

I’ve been completely enamored with lavender this Spring. It’s calming and soothing effects make it a perfect choice for (well, everything if you’re living in my house) chocolate! I’ve been following an auto-immune protocol diet and noticing some deeply nourishing changes in my body. Since my Celestial Chocolate is made with cacao, which has a stimulating effect (something you don’t want when you’re doing a protocol to calm and soothe the immune system) carob is a perfect choice.

This “chocolate” is sweet, and sooooo easy to make. You can flavor it any way that you fancy. I’ve made lavender bars, rosemary bars, lavender with rose petal bars…all with a nice pinch of healthy Himalayan sea salt. Enjoy with some lavender lemonade!

1/4 cup melted coconut oil
1/2 – 1 tbsp raw honey
1 tsp coconut butter
3 tbsp carob powder
pinch of good sea salt

Melt coconut oil in small saucepan on the stove. Add in honey and stir until melted. Stir in coconut butter and carob powder until smooth. Pour into chocolate bar mold and top with any herb combination that you like.

We are living in such an amazing Universe. No matter where you are in your progress for where you want to be, always remember that the journey is the part that is supposed to be juicy and rewarding. We’ve become so goal oriented that we forget to take a minute along the road and really take it in. Decide today to pause and really take time to enjoy the process. It’s where the magic and the mastery is, especially when it doesn’t feel like it is. Turn anxiousness into curiosity, fear into daydreaming possibilities and self-defeatism into hope. You are worthy of living your most meaningful, healthy, exceptional life.
